This is another fantastic chicken recipe. Moist, heavenly chicken coated in sour cream/yoghurt and cracker crumb mixture. Easy and quick to throw together using just a few simple ingredients. Serve this heavenly chicken with just about anything for a simple yet delicious weeknight meal that everyone around the table will ask for again and again!
For this recipe, I use boneless, skinless chicken breasts. I sometimes use chicken thighs. Both are amazing! You can also use either or a combination of yoghurt and/or sour cream depending on your preferences. To make it easier, I place the crackers in a large Ziploc and crush them using a rolling pin. You see, this recipe is easy peasy! I would also recommend using breadcrumbs or panko breadcrumbs if available for best results.
Ingredients
2 tbsp light olive oil
4-6 boneless, skinless chicken breasts or chicken thighs
1 1/2 c. light sour cream or plain yoghurt
1/2 tsp paprika
1 tsp onion powder
2 tbsp melted butter
1 1/2 c. crushed Ritz crackers (1 sleeve) or seasoned breadcrumbs
1 tsp salt
How to make Heavenly Chicken
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using foil, line a rimmed cookie sheet and grease with olive oil.
Step 2: Place the sour cream, salt, onion powder, and paprika in a medium bowl or zip style bag. Mix well, then add the chicken. Toss to completely coat the chicken on all sides.
Step 3: In a large bowl, place the crushed crackers or breadcrumbs. Dredge every piece of chicken in the crumbs, making sure all sides are fully coated.
Step 4: On the prepared pan, lay the coated chicken. Drizzle the melted butter on every piece of the chicken.
Step 5: Place the pan in the preheated oven and bake the chicken for about 45 minutes or until their internal temperature reached 165 degrees F.
