This is a simple recipe to make the best pancakes. These Hoe Pancakes are made with five easy-to-find ingredients; buttermilk cornmeal, self-rising flour, egg, vegetable oil, and milk mixture until you have a pancake batter-like consistency, then fried. Easy, quick, and sure to save your days! Drizzle some maple syrup or honey on top and serve with some of your favourite fruits.
These Hoe Cakes are my kid’s favourite. My mom passed me this recipe just like what her mother did. It’s our family’s recipe and has been around for years. Just like your usual pancakes but way easy to whip up. I suggest starting adding half a cup of milk and more until you reached your desired consistency.
If you want a simple, easy, and quick recipe, this is for keeps. No need for any fancy ingredients, requires only a little effort to make and comes out amazing always. For the toppings, feel free to use your favourites. My kids enjoy drizzles of chocolate and caramel on top. Most of the time, we top it with whipped cream and some fruits. Anything you can think of is fine.
Ingredients
1/2 cup self-rising buttermilk cornmeal
1/2 cup self-rising flour
1 Egg
1 tablespoon vegetable oil
1/2 cup milk, maybe a little more if needed
How to make Hoe Cakes
Step 1: In a mixing bowl, add the cornmeal, flour, egg, and teaspoon oil. Whisk well, then gradually pour in the milk. Mix well until you have a pancake batter consistency.
Step 2: In a frying pan, heat a tablespoon or two oil over medium-high heat. Pour the pancake batter into the pan once the oil is hot using a 1/4 cup measuring cup. Cook on both sides for about 1 to 3 minutes.
Step 3: When done, remove the cakes from the pan and onto a paper towel-lined plate. Or place on a cookie sheet and bake in a 300 degrees oven to keep warm while cooking the rest of the batter.
