HOMEMADE BROCCOLI AND CHEDDAR SOUP

This is the best homemade soup I have ever tasted! Broccoli and cheddar combined along with the other ingredients are to die for! Perfect for the current weather we are in. Every sip and gulp is comforting and filling. Light, hearty, and so savoury. This homemade broccoli and cheddar soup are worth everything!

Ingredients

3 tablespoons butter
¼ small onion, chopped
2 tablespoons all-purpose flour
1 cup half-and-half
1 ½ cups chicken broth
salt and ground black pepper to taste
2 cups chopped broccoli
1 carrot, chopped
1 celery stalk, chopped
1 ¼ cups shredded mild Cheddar cheese

HOW TO MAKE HOMEMADE BROCCOLI AND CHEDDAR SOUP

Step 1: Melt the butter in a stock-pot over medium-high heat.

Step 2: Saute the chopped onion for about 3 to 4 minutes or until translucent. Stir in the flour for about 5 minutes or until golden brown.

Step 3: Slowly pour in the half-and-half and stir well until incorporated.

Step 4: Then, add in the chicken broth. To taste, season with salt and pepper.

Step 5: Let the mixture simmer for about 10 minutes over medium-low heat or until thick.

Step 6: Add the carrot, celery, and broccoli into the pan and continue to simmer for 20 minutes more or until the vegetables are tender.

Step 7: Adjust the heat to low before adding in the Cheddar cheese. Continue to cook for another 5 minutes or until the cheese has melted.

Step 8: Once done, remove from the heat and serve immediately. Enjoy!

Note:

If the soup becomes too thick, add about 1/4 cup water.
