Taste the sweetness of life by eating this awesome Lemon Meringue Pie! I love how perfectly the flavors incorporate with each other. I usually let the crust toast a little. I think it doesn’t get any better than a slightly toasted crust. Feel free to add more amounts of the ingredients if you feel like it. 1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zest
2 tablespoons butter
4 egg yolks, beaten
1 (9 inches) pie crust, baked
4 egg whites
6 tablespoons white sugar


Step 1: Ready the oven and preheat to 350 degrees.

In making the Lemon Filling:

Step 1: Add flour, cornstarch, salt, and 1 cup of sugar in a medium saucepan. Whisk until well-mixed.

Step 2: Pour the water, lemon juice, lemon zest. Stir until well blended.

Step 3: Place the saucepan on the stove and turn the heat to medium-high. Stir and bring to a boil.

Step 4: Add the butter and continue to stir until melted.

Step 5: Crack the eggs and set aside the whites.

Step 6: In a small mixing bowl, add the egg yolks and whisk in a 1/2 cup of hot sugar. Transfer the mixture into the rest of the sugar mixture.

Step 7: Allow the mixture to boil and stir until the texture becomes thick.

Step 8: Turn off the heat and transfer into a baked pastry shell.

In making the Meringue:

Step 1: Place the egg whites into a large metal or glass mixing bowl. Beat until it becomes foamy and creamy.

Step 2: Add in a little amount of sugar at a time and whisk until it forms a stiff peak.

Step 3: Add the meringue on top of the pie and spread it evenly. Cover all the edges of the crust.

Step 4: Place inside the preheated oven and bake for 10 minutes or until the color of the meringue turns golden brown.

Step 5: Remove from the oven and let it sit on a wire rack to cool for at least 10 minutes.

Step 6: Serve warm and enjoy!
