A mouthwatering chicken recipe. Fantastic flavor, buttery with garlic and lemon sauce. Such a rich and delicious dish that is so easy to make.
6 ounces dry whole-grain spaghetti or angel hair pasta
1 pound chicken, (boneless skinless) cut into small pieces
1 tablespoon lemon juice
a dash of salt and pepper
⅓ cup reduced-fat butter or Smart Balance Light
¼ teaspoon salt
fresh ground pepper, to taste
1 tablespoon fresh garlic, minced
¾ cup white wine, see shopping tip
¼ cup reduced-sodium chicken broth
1 tablespoon fresh lemon juice
1 teaspoon all-purpose flour
chives for garnish, optional
How to make Italian Chicken Scampi
Step 1: Cook the pasta according to the package instructions. Make sure to not overcook the pasta. Once al dense, drain the pasta and set aside.
Step 2: Sprinkle the chicken with a tablespoon of lemon juice and a dash of salt and pepper.
Step 3: Grease a large nonstick pan using a cooking spray. Cook the chicken for 4 minutes and flip using a spatula and cook the other side for about 3 to 4 minutes until the chicken is completely cooked. Once done, remove from the pan and transfer to a plate and set the chicken aside.
Step 4: Wipe the pan to clean and grease with more cooking spray. Place the butter in the pan to melt. Add in the salt, pepper, and garlic. Cook for about a minute and stir in the white wine, chicken broth, and lemon juice. Continue cooking over medium-high heat until boiling. Then, adjust the leat to medium and cook for 2 to 3 minutes more until the mixture is reduced to about 3/4 cup.
Step 5: Now, add in the flour and whisk until mixed. And saute for another minute over medium heat.
Step 6: Place the chicken back into the pan and saute until heated through.
Step 7: To serve, divide 3/4 cup of pasta on each plate, spoon about a cup of Chicken Scampi, and drizzle the sauce over the pasta. Garnish with chopped chives and serve hot.
Makes 4 servings (each serving, ¾ cup pasta, and about 1 cup Chicken Scampi with sauce)
