ITALIAN CHRISTMAS COOKIES

Christmas is just around the corner. 100 days before Christmas and we are all thinking about what kind of celebration we’ll have. It is not gonna be the same because of the Pandemic but I will make sure to enjoy every bit and piece of it. And what’s best to give my kids a merry Christmas rather than these Italian Christmas Cookies. A freezer friendly, perfectly sweet, decorated cookies that are great as homemade giveaways and most enjoyed by kids and the kids at heart. These cuties are super easy to make, you can even ask your kids to help out. I am sure they’ll enjoy making these as much as eating them.

INGREDIENTS

4 eggs
1 cup of sugar
1/2 cup butter
2 tsp. vanilla
3 1/2 cup flour
4 tsp. baking powder
For the Icing:
2 cup sifted confectioner’s sugar
2 tsp. vanilla
6 tsp. water

HOW TO MAKE ITALIAN CHRISTMAS COOKIES

Step 1: In a bowl, sift the flour and baking powder.

Step 2: In another bowl, cream the butter and sugar. Add in the eggs, beating every after each addition. Then, the vanilla and the dry ingredients. Beat well.

Step 3: Knead the dough. Add as much flour as you need to keep the dough from sticking to your hands. Pinch off the dough, form a log by rolling it in your hands, and twist the dough into shape.

Step 4: Transfer them on greased cookie sheets.

Step 5: Place inside the oven and bake at 375 degrees for about 10 minutes.

Step 6: Meanwhile for the icing, combine the sifted confectioner’s sugar, vanilla, and water. Stir until the mixture is creamy.

Step 7: Remove the cookies from the oven and dip each cookie into the icing, then, sprinkle with trim.

Step 8: Place the dipped cookies on a wire rack. Making sure to line the wire rack first with wax paper to collect the dripping icing and sprinkles from the cookies.
