The minis are perfect, but these jumbo fluffy walnut apple muffins are my thing. And the buttery crumb topping makes these more irresistible!
Ingredients
½ cup butter
1 ¼ cups white sugar
1 teaspoon vanilla extract
½ teaspoon salt
2 large eggs
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground cinnamon
½ cup milk
2 cups peeled, cored, and sliced apples
½ cup walnuts
¼ cup white sugar
½ teaspoon ground cinnamon
3 tablespoons all-purpose flour
2 tablespoons butter, cubed
HOW TO MAKE JUMBO FLUFFY WALNUT APPLE MUFFINS WITH BUTTERY CRUMB TOPPING
Step 1: Ready the oven. Preheat it to 190 degrees C or 375 degrees F.
Step 2: Use cooking spray to grease or line a jumbo muffin pan.
Step 3: Combine the 1 1/4 cups sugar, 1/2 cup butter, vanilla, and salt in a large mixing bowl until creamy. Add in the eggs a piece at a time, mixing every after each addition.
Step 4: Mix the baking powder, 1/2 teaspoon cinnamon, 1 3/4 cups of flour in a small mixing bowl until incorporated. Add this into the batter. Slowly pour in the milk and fold in the walnuts and apples.
Step 5: Place half tsp cinnamon, 3 tbsp all-purpose flour, 2 tbsp cubed butter, and 1/4 cup white sugar in a small mixing bowl. Mix with a pastry blender. And sprinkle over the cinnamon crumble.
Step 6: Bake in the preheated oven for about 30 minutes or until golden brown and a toothpick inserted in the centre comes out clean.
Step 7: Once done, remove from the oven and cool on a wire rack at room temperature.
Note:
For the batter and topping, you can use toasted walnuts.
