Keto Gumbo (Slow Cooker, THM:S, Low Carb, Paleo, Ketogenic, Whole30)

This easy Keto Gumbo, you can prep in ten minutes. A low-carb dish that is packed with incredible flavour, excellent for busy days, and perfect for the entire family. No need to spend eternity in the kitchen just throw everything in your slow cooker except the shrimps and cauliflower rice. Twenty minutes before the cooking time ends, add the rest. This classic Southern food is perfect for everyone who loves seafood like me. This slow-cooked hearty and comforting soup is what my family’s raving about for days now. This amazing variety of the traditional gumbo is delicious like the original! Original gumbo uses roux to thicken the soup but to make it keto-friendly, I have my favourite keto thickener: Xanthan Gum. To eat healthily, we have to make sacrifices. And this does not hurt a bit! Delicious as ever!

Ingredients

3 pounds Chicken Thighs, boneless and skinless (I used the ones from my ButcherBox)
1 pound frozen shrimp, deveined, no tails
1 pound Sausage, cut into rounds
1 Bell Pepper, diced
1 Onion, Diced
2 Celery Stalks, diced
4 Tablespoons Garlic in Olive Oil
6 oz. Tomato Paste
15 oz. Diced Tomatoes
1 T Cajun Seasoning
1/2 teaspoon each: Cayenne, Thyme, Oregano, Pepper
1/2 teaspoon Xanthan Gum
1-2 c Chicken Bone Broth

How to make Keto Gumbo

Step 1: In a slow cooker, add all the ingredients (chicken, sausage, bell pepper, onion, celery stalks, garlic in olive oil, tomato paste, diced tomatoes, cajun seasoning, a tsp each of cayenne, thyme, oregano, and pepper, Xanthan gum, and chicken bone broth). Mix well.

Step 2: Set on high and cook for 3 to 4 hours. Or 7 to 8 hours on low.

Step 3: Twenty minutes before serving, add the shrimp.

Step 4: Keep the gumbo warm. Serve and enjoy!
