Killer Chicken Thigh Marinade

My mouth is watering just by looking at these killer chicken thighs! This way of cooking the chicken is one of my favourites because it guarantees the best chicken with superior flavour with nicely browned, crisped-up skin. And I am pretty sure you will love the Asian hint of the simple marinade – sweet with the right balance of additional flavours from the Worcestershire sauce and maple syrup. Enjoy these juicy, tender, mouthwatering chicken thighs paired with your favourite side or over hot steamed rice.


8 bone-in, skin-on chicken thighs (about 4 pounds)
2 tablespoons olive oil
1 tablespoon sesame oil
4 tablespoons low sodium soy sauce
1 tablespoon Worcestershire sauce
2 tablespoons lemon juice (or lime juice)
5 tablespoons honey (or maple syrup)
6 cloves garlic (minced)
½ teaspoon black pepper (freshly ground)
2 teaspoons kosher salt (plus more to taste)

How to make Killer Chicken Thigh Marinade

Step 1: In a large bowl, combine the marinade ingredients. You can do this also in a plastic Ziploc bag. Then, add the chicken to the marinade and toss to evenly coat every piece. Place in the fridge to marinate the chicken for at least 30 minutes or overnight.

Step 2: Prepare the oven. Preheat it to 450degrees F.

Step 3: In a baking dish, transfer the chicken skin-side-up with the marinade. Place in a 450 degrees F oven and bake for about 25 to 30 minutes until the internal temperature of the chicken reads 165 degrees F. Baste the chicken thighs in the juices and marinade to ensure that the tops of the chicken are nicely brown and will not dry up. Do this for about 15 to 20 minutes into baking.

Step 4: Set the chicken to the broiler to get a nicely browned, crisped up skin for about 2 to 3 minutes until almost done cooking, making sure to keep an eye to prevent the chicken from burning.
