Lasagna Roll Ups Recipe

Give that usual lasagna a fun twist with this delicious Lasagna Roll-Ups. Easy, quick, and a perfect make-ahead, freezer-friendly meal that reheats well.

INGREDIENTS

12 lasagna noodles cooked to package instructions
16 ounces ground beef 85% lean
24 ounces marinara sauce
1/2 c diced onion
3 garlic cloves minced
1 teaspoon sea salt or to taste for red sauce
1/2 teaspoon black pepper or to taste
1/2 teaspoon dried oregano
15 ounces ricotta cheese
1 large Egg
1/4 c parmesan cheese shredded
3 c mozzarella cheese shredded, divided
1/4 c parsley chopped, plus more to garnish

How to make Lasagna Roll-Ups

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: In a large pot of salted water, cook the noodles following the package directions. When done, drain the noodles and replace with cold water to keep the noodles from sticking together and stop the cooking process.

Step 3: Cook the ground beef in a deep pan or dutch oven over medium-high heat for about 2 minutes, breaking the meat apart using a spatula until no longer pink.

Step 4: Add in the onion and continue to cook for another 3 minutes until tender.

Step 5: Add the garlic to the meat and onions and season with a tsp salt and half a tsp oregano. Saute for a minute more before adding in the marinara. Let it simmer before turning the heat off.

Step 6: In the bottom of a casserole dish, spread half of the meat sauce.

Step 7: Combine the ricotta, 1 egg, 1/4 cup parmesan cheese, 1 1/2 cups mozzarella cheese, and 1/4 cup parsley in a large bowl.

Step 8: Over a large baking sheet, arrange the noodles in a single layer. On top, spread 1/4 cup of the cheese mixture and down the middle, add a heaping tbsp of the meat sauce. Roll the noodles up and transfer to the prepared casserole dish.

Step 9: On top of the roll-ups, spread the rest of the meat sauce and sprinkle with 1 1/2 cups mozzarella cheese.

Step 10: Grab a foil and loosely cover the casserole, making sure that the foil is not touching the cheese.

Step 11: Place inside the preheated oven. Bake for about 40 minutes. Uncover and bake for 2 to 3 minutes more or until the cheese turned lightly golden.

Step 12: When done, remove from the oven. Garnish with parsley before serving. Enjoy!
