These delicious cowboy cookies are packed with oats, coconut, pecans, and chocolate chips in each bite! A huge hit always and perfect for all ages.
Ingredients
3 c flour
1 tbsp baking powder
1 tbsp baking soda
1/2 tsp salt
1 1/2 c (3 sticks) butter, at room temperature
1 1/2 c sugar
1 1/2 c brown sugar
3 Eggs
1 tbsp vanilla
3 c semisweet chocolate chips
3 c old fashioned oatmeal
2 c angel flake coconut
1 1/2 c chopped pecans
How to make Loaded Cowboy Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Use parchment paper to line your baking sheets.
Step 3: In a bowl, whisk the flour, baking powder, baking soda, and salt.
Step 4: Place the butter in a very large bowl and beat until smooth and creamy. Slowly beat in the sugars until incorporated.
Step 5: Add the eggs a piece at a time, beating every after each addition. Stir in the vanilla.
Step 6: Add in the flour and stir until just combined.
Step 7: Fold in the chocolate chips, oats, coconut, and pecans.
Step 8: Scoop out about 1/4 cup cookie dough on each cookie. Roll individually into balls and transfer on a baking sheet 3 inches apart from each other.
Step 9: Place inside the preheated oven. Bake for about 15 to 17 minutes or until the edges are lightly browned.
Step 10: Once done, take the cookies out of the oven and onto a rack to cool.
Notes:
1. For a smaller batch of cookies, make 1/3 of this recipe. Scoop tbsp of dough on the baking sheet and bake for about 10 to 12 minutes until a bit browned.
2. You can use a spatula to tap the edges of the cookies while hot if they come out not perfectly round.
