Loaded Slow-Cooker Potatoes

This incredible slow cooker meal is loaded with potatoes, cheese, and bacon. A perfect meal for the busy days. Not fussy and pretty simple, a kind that will not leave you sweating just to prepare. Just put everything in the slow cooker and leave. And when ready to serve, garnish with extra onions and a drizzle of sour cream. I am sure your family will love this amazing dish. You are welcome to add more if you’d like or make it spicy with some pickled jalapenos. If desired, you can garnish these loaded potatoes with some crumbled blue cheese before serving. I promise, whatever you do, there is no wrong way to top this mouthwatering dish!

INGREDIENTS

Cooking spray
2-pounds baby potatoes, halved and quartered if large
3 cup shredded Cheddar
2 cloves garlic, thinly sliced
8 slices bacon, cooked
1/4 cup sliced green onions, plus more for garnish
1 tablespoon paprika
kosher salt
Freshly ground black pepper
Sour cream, drizzling

How to make Loaded Slow-Cooker Potatoes

Step 1: Use foil to line a slow cooker and grease with cooking spray.

Step 2: Place half of the potatoes, 1 1/4 cups cheese, half the garlic, 1/3 of the cooked bacon, half the green onions, and half the paprika into the prepared slow cooker. And season with salt and pepper.

Step 3: Do the same for the remaining ingredients.

Step 4: Cover with the lid and cook for about 5 to 6 hours on high until the potatoes are tender. Note: Bigger potatoes will need more time to cook.

Step 5: Top with the rest of the cheese and bacon about 20 to 30 minutes before serving.

Step 6: When ready to serve, garnish with extra green onions and drizzle with sour cream.
