Low Carb Cauliflower Breadsticks

I love breadsticks! They are my go-to treat all the time. And these low-carb cauliflower breadsticks are a million better than your traditional breadsticks! With melted cheese and fresh herbs, these breadsticks are surely the most indulgent treat you can easily and quickly make at any time!


1 large egg
1 head cauliflower
1/2 c. Parmesan cheese shaved, plus more for garnish
1/2 tbsp garlic minced
1/2 c. mozzarella cheese shredded
1/2 tbsp fresh Italian flat-leaf parsley chopped, plus more for garnish

Marinara sauce for dipping

3/4 c. mozzarella cheese shredded
1 tsp salt
1/2 tsp black pepper
1/2 tbsp fresh basil chopped, plus more for garnish

How to make Low Carb Cauliflower Breadsticks

Step 1: Prepare the oven. Preheat it to 425 degrees F. Using parchment paper or silicone mat, line a baking sheet.

Step 2: Core the heat of the cauliflower, then cut them into florets. In the bowl of a food processor, place the florets and blend until you have a rice-like texture. To remove the excess moisture from the riced cauliflower, place the riced cauliflower in a paper towel and squeeze.

Step 3: Place the riced cauliflower, 1/2 cup shredded Mozzarella cheese, Parmesan cheese, egg, garlic, basil, parsley, salt, and pepper in a large bowl. Mix well until combined and the mixture holds together.

Step 4: Onto the prepared baking sheet, transfer the cauliflower mixture, and spread it out into about 9 x 7 x 1/4-inch rectangle. Place in the preheated oven and bake for about 10 to 12 minutes. After 10 to 12 minutes, take it out of the oven and top with 3/4 c. shredded mozzarella cheese. Resume baking until the cheese has melted and begins to brown.

Step 5: When done, let it cool for about 10 minutes before slicing it into breadsticks. Serve garnished with some fresh herbs and extra Parmesan cheese. Enjoy with your preferred red sauce.
