This Egg Roll In A Bowl is an easy and quick low-carb meal that is perfect on busy weeknights. Delicious and simple to make with just six basic ingredients. The red pepper flakes are optional but highly suggested for that perfect kick.

Planning a meal is never easy particularly for busy individuals like myself. I worked six days a week and most of the time I resort to takeouts. I hate take-out, I want to be able to whip up a meal myself for my family but prepping a meal feels like a chore most of the time because of my busy schedule. Thank goodness for recipes like this low-carb, easy-to-make Egg Roll In A Bowl. A nice switch to our usual meal and a delicious alternative to the classic egg roll. Ready in just ten to fifteen minutes, this egg roll in a bowl has all the tasty flavour of an egg roll without the carbs!

This egg roll in a bowl is a winner in my house. With the delicious combination of the simple ingredients made in just a bowl, it is no doubt why my family is crazy over this simple dish! You can use ground pork sausage to make this but breakfast, mild Italian sausage, and beef work great, too! And if planning to use fresh ginger, the ratio should be 1/4 teaspoon of ground ginger = 1 tablespoon fresh ginger. Happy cooking!

Ingredients

1 lb ground sausage
7 c. Coleslaw mix
2 tablespoons low sodium soy sauce or coconut aminos
1 tablespoon ginger
1 teaspoon garlic powder
1/2 c. green onions

Optional:

1 tablespoon Red pepper flakes

HOW TO MAKE LOW-CARB EASY TO MAKE EGG ROLL IN A BOWL

Step 1: Cook the sausage, crumbling and stirring as it cooks until completely cooked.

Step 2: Add in the Coleslaw mix, garlic, ginger, and soy sauce. Stir to mix.

Step 3: With green onions, top the sausage mixture and drizzle with extra soy sauce, coconut amino, or sweet and sour sauce.
