Mexican Chicken Casserole

This Mexican Chicken Casserole is a very comforting meal that you can make in a snap using simple ingredients. You can also prep this ahead of time and simply keep it in the fridge until ready to bake.

Ingredients

15 ounces of black beans, drained and rinsed
3 c. crushed tortilla chips or Dorito Nacho Cheese chips
2 c. chopped cooked chicken (rotisserie chicken works well)
1 10-ounces can Rotel tomatoes, undrained
2 c. shredded medium cheddar cheese
2 c. shredded jack cheese
21 ounces cream of chicken soup 2 (10.5 ounces) cans
1 tomato, diced
1 tsp ground cumin
Jalapeños optional
1 bunch of cilantro rinsed and chopped

How to make Mexican Chicken Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using non-stick cooking spray, grease a 13 x 9-inch casserole dish.

Step 2: Lightly crush the tortilla chips and sprinkle about 1 c. Of the crushed chips across the bottom of the prepared baking dish. On top, layer the diced chicken and black beans.

Step 3: In the cream of chicken soup, stir in 1 tsp cumin. Evenly spread this over the chicken and beans with a spatula. Then, top with the canned tomatoes.

Step 4: On top of the tomato layer, evenly sprinkle the cheese, along with the rest of the crushed chips.

Step 5: Place in the preheated oven and bake for about 25 to 30 minutes or until the casserole is hot and bubbly and the cheese has completely melted.

Step 6: Remove from the oven when done and serve the casserole right away garnished with some cilantro and chopped onions. Enjoy with a slice or two of fresh jalapenos.

Tips:

You do not need to drain the Rotel tomatoes.

Feel free to use regular tortilla chips instead of Doritos.

For additional flavor, you can stir a 4 ounce can of diced chiles into the soup/cumin mixture.

Prep this casserole ahead (skip adding the tortilla chips on top). Using plastic, cover the casserole and store it in the fridge. To bake, remove the cover and sprinkle the tortilla chips on top. Bake as directed until hot and bubbly.
