Microwave Lemon Curd

I super love this recipe! Microwave Lemon Curd, literally made possible in a microwave with a few simple ingredients in less than 20 minutes! Fabulously rich, creamy, thick, and bright lemon curd.

We all are aware that making lemon curd is a bit of work and requires your full attention. But being a busy mom like myself, I find it hard to spare that much of time and attention. Good thing this recipe exists! And guess what? It tastes nothing less than the usual lemon curd. This is divine, simple, quick, and insanely easy to make. A real deal and surely a keeper. I can understand if you’ll be a bit hesitant but give this a try, and I am one hundred per cent sure that you’ll believe me when you do.

Ingredients

1 cup white sugar
3 large eggs eggs
1 cup fresh lemon juice
3 lemon (2-1/8″ dia)s lemons, zested
½ cup unsalted butter, melted

How to make Microwave Lemon Curd

Step 1: Add the sugar and eggs into a microwave-safe bowl. Whisk until smooth.

Step 2: Add and stir the lemon juice, lemon zest, and butter.

Step 3: Microwave in a minute interval. Mix every after a minute until the mixture is dense enough to cover the back of a metal spoon.

Step 4: Take the bowl out from the microwave and pour the mixture into each small sterile jar. And keep in the fridge for up to three weeks.

Note:

Remove the pieces of the cooked egg by passing it through a fine sieve.
