Ingredients:
NOODLES – USE ONE:
250 grams/8 ounces fresh egg noodles, thin to medium
150 grams / 5 ounces dried egg noodles, thin to medium
3 instant noodle cakes (I use this)
SAUCE:
2 teaspoons dark soy sauce, or more light soy sauce
1 tablespoon oyster sauce
2 teaspoons light soy sauce (or normal soy)
1 teaspoon sambal oelak, chili paste, or Sriracha (adjust the spiciness to taste)
2 teaspoons sesame oil
2 tablespoons ketchup (yes, really!)
2 tablespoons kecap manis (or dark sweet soy sauce)
STIR-FRIED NOODLES:
20 grams /4 ounces chicken breast or thigh, sliced thinly into small bite-size pieces
100 grams/3.5 ounces prawns/shrimp, raw, peeled, and deveined (smaller are better)
2 Eggs, lightly whisked
3 green onions, cut into 5cm/2-inch lengths (green and white part)
3 garlic cloves, finely chopped
1 c bean sprouts
2 tablespoons vegetable oil
2 c cabbage, finely sliced (any green or white cabbage)
Directions:
In a mixing bowl, add all the ingredients to the sauce. Stir everything until well blended.
Refer to the directions provided on the package of the noodles on how to cook them.
For the Egg Ribbons:
Place a large skillet on the stove and turn the heat to medium. Add 1 tablespoon of oil and allow it to become hot.
Add the beaten eggs and swirl them around the skillet. Cook all sides for about a minute. Move it onto a chopping board.
Roll and slice it into 1/3-inch thick cuts to make the ribbons.
To Cook:
In the same skillet, over high heat, add another tablespoon of oil and allow it to become hot.
Stir in the chicken and garlic, then sear one side for a few minutes. Put the prawns and cook for another minute until they turn pink.
Stir in the bean spouts and cabbage, then toss and cook for another minute.
Stir in the sauce, noodles, and green onions until well combined. Cook for another minute.
Add the egg ribbons, then toss everything until well incorporated.
Serve right away. Enjoy!
Notes:
You can use wheat or yellow noodles for this recipe. I do not recommend rice noodles.
