A fun breakfast that will make your kids go crazy! This Omelet in a Hole is super easy and quick to throw together with ingredients that you have already in hand. Bacon, egg, bell pepper, and cheese-filled omelette that is toasted to perfection. This is my kids’ ultimate breakfast – omelette and toast in one!
INGREDIENTS
6 pieces of sandwich bread square shape
One red bell pepper diced
One green bell pepper diced
8 strips of bacon cut into bite-sized pieces
½ onion diced (about ¼ c.)
2 tbsp butter
6 Eggs
Salt and pepper to taste
1 c. white cheddar cheese shredded, divided
Extra butter for cooking the omelette
HOW TO MAKE OMELET IN A HOLE
Step 1: Cut out the middle part of the bread using a knife leaving an outline around the crust. Set the cut-out pieces aside for later.
Step 2: Melt the butter in a large nonstick skillet over medium-high heat. Once melted, saute the peppers, onions, and bacon until cooked through and the veggies are at your preferred doneness. Place the mixture in a bowl when done and set aside.
Step 3: Drain the excess grease from the skillet and wipe it clean.
Step 4: Place the eggs in a medium bowl with salt, pepper, and half a cup of cheese. Whisk until well mixed.
Step 5: Add a little pat of butter in the now-empty skillet and add 1 to 2 pieces of bread at a time depending on the size of the bread and skillet. Into the centre of the bread, spoon about 1/3 cup of the pepper, onion, and bacon mixture, spreading it around from crust to crust. Then, into the middle, pour around 1/3 cup of the egg mixture until you have filled the bread, then sprinkle with a bit of cheese.
Step 6: Into the hole, very carefully place the cut-out piece of the bread, slightly pushing it down. Continue to cook for a minute or two, then flip the bread over using a spatula and your hand to keep the centre of the bread in place and cook for another minute or two. Repeat until everything is done, adding a bit of butter to the skillet before starting over to cook the rest.
TIP: To make fun shapes, you can use a cookie cutter to cut your bread, making sure that the hole is big enough for the omelette filling.
