Pineapple-Orange Sunshine Cake

A dessert that gives away happiness and sunshine in every bite. This cake is like clouds; light and fluffy. A sponge-like homemade cake that is suited for any occasion. It is fruity, refreshing, luscious, and simply heaven!

I have made this last weekend as a gift for my niece’s birthday. She loved it! This cake was like rays of sunshine. It put smiles on everyone’s faces. It rained praises that day. Guests asked me for the recipe, congratulated me for a job well done. I felt like the celebrant and the Pineapple-Orange Sunshine Cake was the star. One thing I told them over and over was that they will be surprised at how easy it is to make.

Cake ingredients

1 box yellow cake mix with pudding
1 (11 oz.) can mandarin oranges, including juice
½ cup oil
4 large eggs

Frosting ingredients

1 package of Jell-O No Bake Cheesecake mix
1 (20 oz.) can of crushed pineapples, including juice
1 cup of sour cream
1 (16 oz.) container Cool Whip

How to make Pineapple-Orange Sunshine Cake

Step 1: In a mixing bowl, combine the cake mix, oranges including the juice, and oil. Beat on medium speed until well blended.

Step 2: Beat the eggs one at a time, making sure to beat well every after addition.

Step 3: Empty the batter into the greased and floured 9×13-inch pan or 2 9-inch round or square pans.

Step 4: Place inside the oven and bake on 350 degrees for about 20 minutes.

Step 5: Once done, remove from the oven and cool the cake on a wire rack while preparing the frosting.

To make the Frosting

Step 1: Place the cheesecake in a bowl and mix. Stir in the crushed pineapple including the juice followed by the sour cream. Mix until incorporated. And add in the cool whip and fold into the cheesecake mixture.

Step 2: For the final step, generously frost the cooled cake and chill.
