PUMPKIN SPICE CUPCAKES WITH CINNAMON FROSTING

These lovelies deserve the top spot on your dessert table. The pumpkin flavour with cinnamon makes ordinary cream cheese frosting extra special. The reason I fell head over heels with these wonderfully delicious cupcakes.

Ingredients

2 ¼ cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon ground allspice
½ teaspoon salt
1 tablespoon baking powder
½ teaspoon baking soda
½ cup butter softened
1 cup white sugar
⅓ cup brown sugar
2 large eggs, room temperature
¾ cup milk
1 cup pumpkin puree

Cinnamon Cream Cheese Frosting

1 (8 ounces) package cream cheese, softened
¼ cup butter softened
3 cups confectioners’ sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

HOW TO MAKE PUMPKIN SPICE CUPCAKES WITH CINNAMON FROSTING

Step 1: Ready the oven. Preheat it to 190 degrees C or 375 degrees F.

Step 2: Use cooking spray to grease or line a 24 muffin cup.

Step 3: Sift the flour, nutmeg, ginger, 1 teaspoon cinnamon, allspice, baking powder, clove, baking soda, and salt in a medium mixing bowl. Set aside.

Step 4: Combine the brown and white sugar with half a cup of butter in a large mixing bowl until light.

Step 5: Add in the eggs a piece at a time, mixing every after each addition. Then, pour in the milk followed by the pumpkin puree. Mix well until incorporated. Add this into the flour mixture and stir until well mixed.

Step 6: Fill the prepared muffin cups with the batter. Bake in the preheated oven for about 25 minutes or until golden and the top bounces back when lightly touched.

Step 7: Once done, allow the cupcakes to sit in the pans for at least 5 minutes and onto a wire rack to cool at room temperature.

Step 8: Meanwhile, add 1/4 cups of butter and cream cheese in a medium mixing bowl. Use an electric mixer to beat the mixture until incorporated before slowly adding in the confectioners’ sugar, 1 teaspoon ground cinnamon, and vanilla extract. Continue to beat until well mixed.

Step 9: Frost the cupcakes and serve. Enjoy!
