My kids were blown away by this sausage McMuffin casserole when I first made this. This climb up the ladder to their favorites fast. And this became one of our favorite rotations.

I only had high hopes for this recipe. I did not even hesitate to try this because I know that it’ll turn out so good. And I was not wrong! I love how I can easily make this using only ingredients I have on hand. The best part is, that I can prep this ahead. Making my life so much easier!

4 Eggs
4 English muffins, split (Bays)
salt and pepper, to taste
1 c. cheddar cheese
1¼ c. milk
8 ounces breakfast sausage, cooked and crumbled

Step 1: Spray an 8-inch square baking dish.

Step 2: Into 6 pieces, cut each half of the English muffin. In a single layer, add half of the cubed English muffins and top with half of the sausage followed by half c. Of cheese. Repeat the layers with the rest of the English muffins, sausage, and cheese.

Step 3: In a medium bowl, place the eggs, milk, salt, and pepper. Mix well until blended.

Step 4: Evenly covers the casserole, and pour the egg mixture. Using plastic wrap, cover the baking dish and keep it in the fridge for at least 1 hour or up to 1 day.

Step 5: When ready to bake, place the casserole at 325 degrees preheated oven and bake for about 45 to 50 minutes.
