Shrimp Tomato Spinach Pasta in Garlic Butter Sauce

This Mediterranean-style seafood pasta is light, healthy, and super fresh. It is an incredible pasta packed with fresh ingredients. This has a winner combination of pasta, seafood, and vegetables!

Ingredients

4 tbsp butter
1 tbsp olive oil
1 pound shrimp, fresh, uncooked, shelled, and deveined
5 tomatoes, medium size, fresh, chopped into large cubes
10 ounces fettuccine pasta
5 garlic cloves, minced
¼ lemon
¼ tsp paprika
1 c. spinach cooked
½ c. Parmesan cheese grated, for serving
¼ tsp salt
½ tsp crushed red pepper or more

How to make Shrimp Tomato Spinach Pasta in Garlic Butter Sauce

Step 1: Melt 1 tbsp butter with 1 tbsp olive oil in a large skillet over medium-high heat. Once the butter has melted, add the shrimp to the skillet along with half of the minced garlic. Cook for about a minute until one side of the shrimp is pink. Make sure not to overcrowd the pan.

Step 2: Generously season the uncooked side of the shrimp with paprika and salt while the shrimp are cooking. Then, flip and continue to cook the other side for an additional 1 to 2 minutes until pink.

Step 3: Add the chopped fresh tomatoes to the skillet with the shrimp along with the cooked spinach and the rest of the minced garlic. Now, add half tsp crushed red pepper (more if you preferred) and mix well.

Step 4: Following the package directions, cook the pasta. When done, drain and rinse under cold water.

Step 5: To the skillet, add the cooked pasta and 1 to 2 tbsp butter. Then, add the freshly squeezed lemon juice. Make sure not to add too much lemon juice and sprinkle with salt and extra crushed red pepper. Heat for a few minutes over medium heat until the shrimp are completely cooked and everything is warmed.

Step 6: Remove from the heat when done and serve the Shrimp Tomato Spinach Pasta in Garlic Butter Sauce right away garnished with grated Parmesan cheese. Enjoy!
