Sloppy Joe Casserole

I love this Sloppy Joe Casserole! It is the perfect comfort food that you can easily make in under an hour. This casserole is made with just a few simple ingredients and can serve a family of eight. I absolutely love this casserole. The mixture of beef, veggies, penne pasta, and tons of cheese hit all the sweet spots! This is a fabulous version of my favorite Sloppy Joe Sandwich but in a casserole form. And the combination of flavor and texture of this casserole alone is already a temptation. I sprinkle some chopped bacon (optional) and it is just wow!

INGREDIENTS

3 Garlic Cloves, minced
1 pound Ground Beef
1 small Yellow Onion, diced
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
14 ounces Petite Diced Tomatoes
1 tsp Yellow Mustard
16 ounces Penne Pasta
2 c. Frozen Corn
8 ounces Colby Jack Cheese, shredded
Salt and Pepper, to taste
1 c. Ketchup
1 tbsp Light Brown Sugar

How to make Sloppy Joe Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In a large skillet, heat a little olive oil over medium-high heat. Add the beef along with the onion, green bell pepper, red bell pepper, and garlic. Stir and cook, breaking the meat into chunks until browned. Drain the excess grease when done.

Step 3: Into the skillet, add the tomatoes, ketchup, brown sugar, mustard, salt, and pepper. Stir well. Decrease the heat and let everything simmer until completely heated.

Step 4: Following the package directions, cook the penne in a large pot of salted boiling water until al dente. Drain when done and set the penne aside.

Step 5: To the ground beef mixture, add the corn, pasta, and cheese. Mix well, then transfer the mixture into a 9 x 13-inch baking dish.

Step 6: Place in the preheated oven and bake the casserole for about 20 minutes or until the cheese is bubbly.
