Strawberry Shortcake Cheesecake

INGREDIENTS

For the Bottom crust

22 Golden Oreos Crushed
5 tablespoons melted butter

For the Filling

4 8oz packages cream cheese
1 2/3 cups sugar
1/4 cup corn starch
1 tablespoons Pure Vanilla Extract
2 large Eggs
3/4 cup Heavy Whipping Cream
Jar of Smuckers strawberry ice cream topping

For the Topping

12 Golden Oreos Crushed & divided into 2 bowls (one for plain Oreo topping, one for your strawberry ones)
1 1/2 teaspoons Softened Butter
3 tablespoons from a small package of strawberry gelatin

How to make Strawberry Shortcake Cheesecake

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Use an aluminum foil to line the outer perimeter of the pan. And grease the pan by generously applying butter.

Step 3: To make the crust, crush the Oreo’s and mix it with butter. Then, press the Oreo and butter mixture into the bottom of your prepared springform pan.

Step 4: To make the filling, combine a 1 8-ounce package of cream cheese, 1/3 cup of sugar, and cornstarch in a large bowl.

Step 5: Use an electric mixer to combine on low for about 3 minutes until creamy. And beat the rest of the packages of the cream cheese until incorporated.

Step 6: Adjust the speed of your mixture to high and continue beating the rest of the sugar, then, the vanilla.

Step 7: Beat in the egg one at a time, beating every after addition.

Step 8: And mix in the heavy cream.

Step 9: Don’t overmix the batter. Make sure to beat until the filling until just blended.

Step 10: Carefully spoon half of the cheese filling over the prepared crust. And plops everywhere half of the strawberry jar topping.

Step 11: With a butterknife, marbleize the cheese and strawberries by dragging the butterknife through them. Repeat the same process for the remaining batter and topping.

Step 12: Place inside the preheated oven and bake for an hour or until you see only a slight jiggle when the cake is mildly swayed.

To make the Crumb Topping

Step 1: Place the Oreo cookies in a small bowl or food processor and pulse into large crumbs.

Step 2: Add in the softened butter. Use a fork or your hands to gently mix the Orea crumbs and butter to make the pea-sized pieces mix.

Step 3: Reserve 2 tablespoons mixture. Scoop it out into a small bowl.

Step 4: Now, with the remaining crumbs, pour in the strawberry jello and continue to pinch the pieces. You may need to add more softened butter if needed. It’ll help the mixture to stick to the cake.
