Stuffed Pepper Soup

A packed and delicious meal that is perfect for your whole family! Stuffed Pepper Soup is a filling, satisfying dish to add to your weekly menu rotation. Simple, not fussy, and so good your loved ones will ask for it over and over again!

I have been making this savoury dish for years now. It makes my mouth water always whenever I think about it. It is a full meal and it’s convenient to make. The ingredients are mostly pantry ingredients. This takes longer to cook but it’s worth it! What I love most about this is I don’t have to spend eternity in the kitchen. I just put everything into the slow cooker and leave it to cook. Perfect for busy days.

INGREDIENTS

1 lb lean ground beef
1 (15 ounces) can tomato sauce
1 (14.5 ounces) can diced tomatoes with garlic and onions
3 c beef broth
1 c cooked rice
1 yellow onion, finely chopped
1 green bell pepper, seeds removed, chopped
1 red bell pepper, seeds removed, chopped
1/2 tsp dried oregano
1/2 tsp dried basil
1 bay leaf
kosher salt and freshly ground pepper, to taste

How to make Stuffed Pepper Soup

Step 1: In a large pan or skillet, brown the beef over medium-high heat. Drain excess grease but leave at least 2 tbsp of fat and set aside.

Step 2: Using the same skillet, saute the onions until soft and translucent. To taste, season with salt and pepper.

Step 3: In a slow cooker, add the beef and onions.

Step 4: Add in the tomato sauce followed by diced tomatoes, beef broth, rice and bell peppers.

Step 5: Cook on high, covered, for about 3 hours or 6 to 8 hours on low.

Step 6: Adjust the seasoning according to taste.

Step 7: Once done, ladle into serving bowls and serve immediately. Enjoy!
