Super Easy Tex-Mex Beef Enchiladas Recipe

This will rev up your taste buds. Super easy, quick, and mouthwatering Tex-Mex Beef Enchiladas.

Ingredients

2-3 lb coarse ground chuck
2 Tbsp cooking oil
1 medium white onion
2-3 medium jalapeno or serrano peppers
1/3 bunch fresh cilantro
1 Tbsp chilli powder
1 Tbsp smoked paprika
1 tsp sea salt
1 tsp ground black pepper
12+ homemade corn or flour tortillas (links in comments or can use store-bought)
1 cup grated Monterey jack cheese
1 cup grated Mexican blend cheese
2-3 cups enchilada sauce RED HOT ENCHILADA SAUCE (SALLYE)

HOW TO MAKE TEX-MEX BEEF ENCHILADAS

Step 1: Start by cooking the Red Hot Enchilada sauce or use a store-bought if desired. Set aside.

Step 2: Prepare the oven. Preheat it to 350 degrees.

Step 3: Place the peeled and quarter sliced onion in a food processor. Slice the peppers in half and remove the stems, seeds, and veins. Grab the cilantro and take away the stems. Add both peppers and cilantro to the food processor. Pulse until finely minced.

Step 4: In a bowl, place the cheeses and set aside.

Step 5: Heat the oil in a large heavy non-stick skillet over medium-high heat. Add the ground chuck, chilli powder, paprika, salt, and pepper. Stir and cook until the meat is no longer pink.

Step 6: Pour the mixture from the food processor and continue to cook for another 2 minutes. Take away from the heat and set aside.

Step 7: Meanwhile, on a paper towel add 4 to 6 pieces of tortillas. Cover them with another paper towel and microwave for about 20 seconds. Once soften, transfer on a cutting board or large piece of waxed paper.

Step 8: Grab one piece of tortilla. Add a spoonful of meat mixture in the centre, followed by a bit of grated cheese before rolling it up. Transfer seams down on a lightly greased 9 x 13-inch baking dish.

Step 9: Do the same for the rest of the ingredients.

Step 10: Once done, pour on top of the rolled tortillas the enchilada sauce and sprinkle with the rest of the cheese or more cheese if desired.

Step 11: Bake in the preheated oven for about 25 to 30 minutes or until the cheese is crusty and bubbly.

Step 12: Remove from the oven and serve with salsa, charro or refried beans, and Spanish rice. Enjoy!
