Ingredients

1/2 c. butter melted
1 lb cooked chicken diced (about 2-3 c.) or use rotisserie
1 can cream of chicken soup 10.75 oz.
1 container sour cream 8 oz.
1/2 c. shredded Parmesan cheese
1 sleeve buttery round crackers about 1 c. crushed (such as Ritz)
2 tsp poppy seeds

HOW TO MAKE THE VERY BEST POPPY SEED CHICKEN CASSEROLE

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: Place the cooked chicken, sour cream, cream of chicken soup, shredded Parmesan cheese, and poppy seeds in a large bowl. Mix well, then spread on the bottom of a 2-quart casserole or 9×9-inch pan.

Step 3: Combine the crushed Ritz cracker with melted butter until well blended. Sprinkle this over the chicken mixture.

Step 4: Place in the preheated oven and bake the casserole for about 25 to 30 minutes or until bubbly.

Step 5: Remove from the oven when done and serve the casserole right away with a simple side salad, green beans, broccoli, rice, or asparagus. Enjoy!
