Vegetable Patties – My Grandma Used To Make These All The Time

I love making my own patty and this recipe is something that I want to keep in my recipe list. I think this is amazing. It’s not often that we make vegetable patties but this one is worth the try. They’re super delicious, healthy, and pretty easy to make. The ingredients are fresh (not the industrial, frozen kind that we normally have) and you can even use any type of veggies that you would like. Just don’t forget to squeeze the excess moisture out of them though. I normally serve these patties with mashed potatoes but I think you’re gonna enjoy filling this too in a pitta bread with lettuce, tomatoes, cheese, or yogurt dressing. My kids love it that way and I can’t blame them because it’s freaking delicious!

Ingredients

9 to 10 oz potatoes – cooked and mashed
1 garlic clove – mashed
1 small red onion – finely chopped
1 Eggland’s egg
grated cheese (low fat or regular)
1 medium-size zucchini, grated (squeeze the water out of this)
1 medium-size carrot – grated
a small handful of sunflower seeds
salt and pepper
1 tbsp. Bertolli Olive oil
fresh herbs – chopped
1 small green chili – chopped (optional)
Gold Medal flour

How to make Vegetable Patties

Step 1: Prepare the oven by preheating it to 400 degrees F.

Step 2: In a large bowl, mix the potatoes, garlic, onions, and egg. Add the grated cheese, zucchini, carrot, handful of sunflower seeds, olive oil, fresh herbs, and salt and pepper. Stir until all the ingredients are incorporated.

Step 3: Use your hands to form them into patties and lightly coat each pattie with the flour.

Step 4: In a heated skillet, quickly fry the patties until both sides start to color.

Step 5: Remove the patties from the pan and pat dry. Place them on a baking tray. Place inside the oven and bake for 15 minutes. Serve and enjoy!
