We Can’t Get Enough of This BLT Chicken Salad

Satisfying and extremely tasty BLT Chicken Salad, so good we can’t get enough of this hearty, romaine lettuce filled with chicken, bacon, and simple salad dressing. Perfect for a light yet filling lunch or dinner that your whole family will ask over and over again. Serve as is or alongside anything. Not fussy and comes out great always.

I always love salads, and this recipe is one of my favourites. I sometimes add slices of boiled eggs, and it’s perfect!

Ingredients

5 slices bacon
3 cups diced cooked chicken
1 cup chopped fresh tomato
2 stalks celery, thinly sliced
¾ cup mayonnaise
2 tablespoons minced green onion
1 tablespoon chopped parsley
1 teaspoon lemon juice
1 dash Worcestershire sauce
1 pinch salt and ground black pepper to taste
12 leaves romaine lettuce
1 large avocado, sliced

HOW TO MAKE BLT CHICKEN SALAD

Step 1: Cook the bacon in a large skillet over medium-high heat for about 10 minutes or until greasy and crispy. Transfer and crumble the cooked bacon on a paper towel-lined plate and drain excess grease.

Step 2: Combine the chicken, bacon, celery, and tomato in a large mixing bowl until well mixed.

Step 3: Mix the mayonnaise, Worcestershire sauce, lemon juice, green onions, parsley, salt, and pepper in a different mixing bowl until smooth.

Step 4: Add the dressing with the chicken and bacon mixture and mix until evenly coated.

Step 5: Chill in the fridge for at least 30 minutes.

Step 6: Fill the romaine lettuce leaves with the chilled chicken and bacon mixture and top with avocado.
