WHITE CHOCOLATE STRAWBERRY CAKE

This is going to be my soon to be wedding cake. Simple, perfectly sweet, and lovely. I can now imagine my guests celebrating with me with this heavenly White Chocolate Strawberry Cake.

Ingredients

2 ¾ cups cake flour
2 ½ teaspoons baking powder
2 cups white sugar
1 cup butter, softened
1 (3 ounces) package strawberry flavoured Jell-O®
4 large eggs
1 cup milk
1 teaspoon vanilla extract
½ cup strawberries, pureed
4 ounces cream cheese
4 ounces white chocolate baking squares
3 tablespoons heavy whipping cream
4 cups confectioners’ sugar

HOW TO MAKE WHITE CHOCOLATE STRAWBERRY CAKE

Step 1: Ready the oven. Preheat it to 175 degrees C or 350 degrees F.

Step 2: Use cooking spray to grease two 9-inch round cake pans or waxed paper to line the pans.

Step 3: Mix the baking powder and flour in a small mixing bowl until incorporated.

Step 4: Place the butter, gelatin, and white sugar in a different mixing bowl. Beat until combined before slowly adding in the eggs, beating every after each addition.

Step 5: Mix the milk and flour mixture into the sugar mixture until well combined. Fold in the strawberries and add in the vanilla extract. Stir until incorporated.

Step 6: Fill the prepared cake pans with the batter.

Step 7: Bake in the preheated oven for about 25 to 30 minutes or until a toothpick inserted in the centre of the cake comes out clean.

Step 8: Once done, remove from the oven and allow to cool on wire racks at room temperature.

Step 9: Meanwhile, add the white chocolate, heavy whipping cream, and cream cheese in a saucepan over medium heat. Stir for about 5 minutes or until the chocolate has fully melted before stirring in the confectioners’ sugar until smooth.

Step 10: Frost the top of the cake, then, add the second layer on top of the frosting and spread the remaining frosting on top and sides of the second cake.
