Yellow Squash Casserole

I woke up today craving for the food I ate 2 weeks ago. My friend visited me and she brought this amazing Yellow Squash Casserole. I instantly fell in love with it! It has a very delicate and complex flavor. Good thing that she taught me how to make this dish. Now, I am making it pretty much all the time! It is a very simple dish. You just need a very minimal set of ingredients and 7 easy steps. Just follow this set of instructions that I have provided for you and I am 100% sure that you will be making the perfect comfort food! Surprise your family with this. You are welcome! Enjoy!

Ingredients

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

How to make Yellow Squash Casserole

Step 1: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C.

Step 2: In a large skillet, pour in a small amount of water, and cook the squash and onion over medium heat. Cook for about 5 minutes until tender. Drain thoroughly, and put the cooked squash and onion in a large bowl.

Step 3: Mix the cracker crumbs and cheese in a medium bowl.

Step 4: Combine half of the cracker mixture into the cooked squash and onions.

Step 5: In a small bowl, whisk in the eggs and milk, then, add it to the squash mixture. Stir in 1/4 cup of melted butter, and season with salt and pepper.

Step 6: Pour the mixture into a 9 x 13-inch baking dish and sprinkle with the remaining cracker mixture. Dust with 2 tablespoons of butter.

Step 7: Place inside the preheated oven and bake for 25 minutes or until lightly browned. When done, remove from the oven. Serve and enjoy!
