Fried Chicken is a must at home! The kids prefer fried chicken more than anything else. And this easy Crispy Southern Fried Chicken recipe is one to keep. I removed the skin from the chicken pieces before breading them. This is optional, and you can skip it. And the breading certainly coated the chicken to the bone with its perfect flavour. I am one hundred per cent sure your family will love this!
Ingredients
1 fryer chicken, cut up or your favourite pieces (I use about 4 to 6 bone-in chicken thighs)
2 tablespoons salt
2 cups water
1 1/2 to 2 cups milk
1 large egg
1 to 1 1/2 cups self-rising flour
2 teaspoons onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
2 teaspoons chicken soup base
2 teaspoons Paul Prudhomme’s poultry magic or other poultry seasonings (optional)
canola oil for frying
How to make Crispy Southern Fried Chicken
Step 1: Dissolve 2 tbsp salt in about 2 cups of water in a large plastic container.
Step 2: This is optional but if you want to remove the skin from the chicken you can. Then, place the chicken pieces in the container. If needed, you can extra water, so the chicken pieces are covered. Put the lid on and sit the chicken in the fridge for at least an hour.
Step 3: Into a bowl, pour the milk. Add the egg and beat using a fork until smooth. Set aside.
Step 4: Add the flour, seasonings, and soup base to a different bowl. Using a fork, mix well.
Step 5: In the flour mixture, dredge the pieces of chicken, then coat them in the milk and egg mixture and roll in the flour mixture again.
Step 6: Pour about an inch deep of oil in a large, deep iron skillet and heat to approximately 375 degrees. Once the oil reached the required temperature, add the chicken pieces to the skillet and fry for about 7 to 8 minutes on each side until the juices run clear. Make sure to do this in batches to not overcrowd the pan. To a serving platter, transfer the fried chicken. Alternately, you can fry the chicken pieces in a deep fryer set to 350 degrees. Fry a few pieces at a time for approximately 15 minutes until the juices run clear.
ALTERNATE METHOD:
1. Prepare the oven. Preheat it to 400 degrees.
2. In hot oil in a cast-iron skillet, brown the pieces of chicken.
3. To a broiler pan well greased with cooking spray, transfer the chicken and place it in the preheated oven. Bake for about 20 minutes or so until the juices run clear.
4. Take the chicken from the oven when done and transfer them to a serving platter.
